After bottling, we are left with barrels that need to be cleaned. In winemaking terms, this process is known as <i>sulfur wicking<\/i>. It involves disinfecting the barrels by placing a lit sulfur wick inside them, whose purpose is to eliminate bacteria. However, this method has the drawback of leaving <span class=\"s1\"><b>sulfur residues<\/b><\/span> inside the barrels.<\/p>\n<p class=\"p1\">You have probably heard about the debates surrounding the presence of <span class=\"s1\"><b>sulfites<\/b><\/span> in wine. In order to reduce and better control the addition of sulfur dioxide (SO\u2082), <span class=\"s1\"><b>Domaine de Cardon<\/b><\/span> decided to invest in a <span class=\"s1\"><b>UV wand<\/b><\/span>. This tool allows us to sterilize our barrels <span class=\"s1\"><b>without using any chemical products<\/b><\/span>. It also helps us avoid the risks associated with toxic emissions and prevents potential alterations to our wines caused by incorrect SO\u2082 levels.<\/p>\n<hr \/>\n<h3><b>Even More Information About Our Barrels!<\/b><\/h3>\n<p class=\"p1\">To vinify and age our wines, we have chosen to use barrels ranging from <span class=\"s1\"><b>1 to a maximum of 7 years old<\/b><\/span>. Each year, a rotation takes place, and some barrels eventually become unsuitable for our needs. To avoid waste and destruction, we decided to <span class=\"s1\"><b>rent out these barrels<\/b><\/span>.
