The plot is named "Roc Blanc" and is located in Mercurey in the Côte Chalonnaise at an altitude of 250 metres.

Vinification

The grapes are harvested by hand, followed by a slow pneumatic pressing and a 24-hour rest in vats. Fermentation takes place entirely in barrels.

Wine aging

10 months in oak and acacia barrels

Gastronomy

Opened young, it will go perfectly with creamy dishes. When matured, it will go particularly well with shellfish such as lobster or simply with a fish terrine. You can also enjoy it with a strong cheese or a fruit salad.
