The plot is located in Mercurey in the Côte Chalonnaise, facing South at an altitude of 260 metres
After manual harvesting, the grapes are destemmed and put in vats for three weeks. A rise in temperature at the end of the vinification process allows an optimal extraction of colour, tannins and aromas.
Exclusively in oak barrels for 10 to 12 months
Ideal with a coq au vin, a roast duck, a pan-fried rack of pork or a fillet of beef in sauce
Between 5 and 10 years
Between 15°C and 17°C
